Store the roast refrigerated at 5°or below. It is suitable for home freezing, but please freeze on the day of purchase and ensure the beef is defrosted thoroughly before you use it.
The Gallaghers Prime Beef Salmon Cut Roast is always best roasted. Bring your joint to room temperature before cooking. Season it with salt and pepper.
Roast it in a preheated oven at gas mark 7/220°c for the first 20 minutes, then turn your oven down to gas mark 3/160°c and continue cooking for 15 minutes per 450g /lb. If you want medium give it an extra 5 mins per 450g/lb.
Rest your meat after cooking for at least 15-20 in a warm place, cover loosely with foil. This will help retain the juices and make carving much easier.
