Ingredients
- 8 Gallagher’s Cumberland Sausages
- 2 White Onions
- 2 cloves of garlic
- olive oil
- 2 x 400 g tins of chopped tomatoes
- 2 x 400 g tins of beans – cannellini beans or mixed beans
- 5 sprigs of fresh herbs like rosemary or thyme (or 1/2 teaspoon of dried mixed herbs)
- 1 small glass of red wine (optional)
Instructions
- Preheat the oven to 180ºC/gas 4.
- Peel the onions and garlic and finely slice.
- Put the sausages in a non-stick frying pan with a drizzle of oil
- Add the onions and herbs and season with salt and pepper.
- Cook on a medium heat for about 20 minutes until browned.
- Pour in the wine (and simmer gently until its almost gone
- Add the tomatoes and beans, bring them to the boil and simmer for 20 minutes.
- Spoon the sausage mixture into a baking dish and bake for 10 to 15 minutes.
- If preferred sprinkle with breadcrumbs to give a toasted crust.
- Serve with Mashed potato or crusty bread.
