Cumberland Sausage Casserole

Ingredients

  • 8 Gallagher’s Cumberland Sausages
  • 2 White Onions
  • 2 cloves of garlic
  • olive oil
  • 2 x 400 g tins of chopped tomatoes
  • 2 x 400 g tins of beans – cannellini beans or mixed beans
  • 5 sprigs of fresh herbs like rosemary or thyme (or 1/2 teaspoon of dried mixed herbs)
  • 1 small glass of red wine (optional)

Instructions

  1. Preheat the oven to 180ºC/gas 4.
  2. Peel the onions and garlic and finely slice.
  3. Put the sausages in a non-stick frying pan with a drizzle of oil
  4. Add the onions and herbs and season with salt and pepper.
  5. Cook on a medium heat for about 20 minutes until browned.
  6. Pour in the wine (and simmer gently until its almost gone
  7. Add the tomatoes and beans, bring them to the boil and simmer for 20 minutes.
  8. Spoon the sausage mixture into a baking dish and bake for 10 to 15 minutes.
  9. If preferred sprinkle with breadcrumbs to give a toasted crust.
  10. Serve with Mashed potato or crusty bread.
