Local Produce As members of Bord Bia, we at Gallagher’s continue to market local Prime beef Spring lamb and pork which is safe, hygienic, wholesome. All our beef and lamb is naturally produced mostly reared on our own farms in the Finn Valley. All our pork is locally sourced. Therefore from our best steak to our bacon we can guarantee excellent quality and full traceability of all our meat, to you, our customers.

Best Butcher Donegal Steak, Prime Beef, Spring Lamb & Succulent Pork

For over fifty years, we here at Gallagher’s Butchers Castlefinn have supplied prime beef, spring lamb and succulent pork , reared on our own farm in the Finn Valley, to local customers and catering establishments in Donegal, Tyrone, Derry Londonderry, Fermanagh, the Finn Valley and the rest of Ulster.
I’m sure you have often been told that Ireland is renowned worldwide for its grass-fed beef and lamb . We know what gives our own Gallagher’s prime beef and lamb its unique taste is the environment in which our animals are reared.

Prime Beef

All our cattle are grazed on the lush pasture of the Finn Valley throughout the warmer months from Spring to Autumn. In the colder months when grass becomes scarce we house our cattle and supplement their silage feed with grain based meal. That gives our cattle the best chance of laying down lean muscle which produces the best prime beef and the best butcher donegal steaks.

Spring Lamb

At Gallagher’s, we graze our sheep on the hills and rich pasture of Donegal. They get to graze, not only grass but, a varied foliage, including heather. This as a result gives the lamb, in particular, a natural and unique flavour and texture.

Why do they call it Spring Lamb?

You might wonder if the lambs you see in the fields in the springtime running and jumping and having great fun with all the other lambs are what they mean when you see Spring Lamb packaged in the shop. Obviously not. Warmer countries which have a longer lambing season and produce lambs almost all year round are ready to supply the shops in the springtime . Up until around late summer, a lot of the lamb sold at supermarkets is imported from countries with longer lambing seasons.
Ireland on the other hand, has a shorter lambing season. Most lambs in Ireland are born in the Spring. So the lambs you see in the fields in the Spring and Summer are only a few weeks or months old.
You get the best tender meat and flavour from Irish lamb that is born in the Spring . That’s because it is reared on its mothers milk and the best of green grass over the summer months. The common term ‘spring lamb‘ refers to when the lambs are born.

Succulent Pork

We source all our pork locally from experienced pig farmers who care about the welfare of their animals. The best pork is reared where they have access to a wide range of vegetation and a very natural environment. A happy pig is a tasty pig.

What does it involve?

Over recent decades the mass production of food and the air miles accumulated have given certain foods a bad reputation and caused some health scares. I find that this worries a lot of people.
Locally sourced and slaughtered meat is the only way to minimise such worries.
We rear most of our prime beef and spring lamb and locally source all our pork.

If Brendan Gallagher is known for anything, it’s the pursuit of perfection.

Slaughterhouse and butchering wouldn’t be the first career choice of many – it’s hard work and long hours. However, when you are born into it like I was, because your family are butchers, it becomes second nature.

What drives us? It’s when all the hard work results in a quality product and our customers can enjoy the taste and quality. That is what drives us.

And anyway who doesn’t like a nice juicy steak – and we do do a good steak – some say the Best Steak in Donegal!
